Vineyards

Falanghina area in the municipality of Cautano 700 meters above sea level.


Vinification

Selection of grapes in the vineyard and in the cellar. Soft pressing, fermentation of the must at a controlled temperature. Fermentation in steel is followed by an elevage on fine lees regularly resuspended in wine for about six months. The refinement continues for another four months in highly toasted American oak. Rest in the bottle, before being released for another 4 months.


Organoleptic description

At sight it is straw yellow with golden reflections and on the nose with light aromas of roasted coffee, classic notes of apple, aromatic herbs and white flowers that evolve towards subtle and elegant mineral tones. Enveloping, fresh and intense structure, it is perfected with a few years of aging in the bottle, acquiring elegance, complexity and harmony.

Gastronomic suggestions

Precious with shellfish, seafood and fish, it also goes perfectly with non-mature and soft cheeses, salami, risotto with porcini mushrooms and preparations based on truffles.
